I don't really like pancakes that much. When I was little I ate so many pancakes that it made me sick. So for the past 10+ years I have despised the smell and taste of them. Recently, I tried one of my vegan's friends pancakes and actually kinda liked them. The recipe is pretty much flour and soya milk, so on their own, they're pretty plain. Which is good if you are like me and find things easily sickly. Vegan pancakes take less time to prepare than normal ones - so they're awesome if you're lazy or in a rush!
Super-Easy Recipe
Makes 6-8 big pancakes
250g Plain Flour
1tsp Baking Powder
650ml Soya (or other milk alternative)
Pinch of salt
Oil for frying (I got away without using any, but this depends on your pan)
1. Heat up the oil in your pan
2. Whilst your waiting for the pan to heat up, put the flour, baking powder & salt in a bowl
3. Add the soya milk
4. Whisk the mixture all together until there's no lumps of flour left (aprox. 3 mins)
5. When the pans hot, pour enough mixture to cover the whole of the pan
6. When you can easily slide a spatula underneath the mixture, this is when you will be able to flip your pancake
7. When you have flipped your pancake, it will need to be on the heat for around the same time it had been frying as the other side.
8. When the pancake has browned on either side, they are readyyyy!
9. If you are cooking them for someone like myself, place all of the cooked pancakes on a tray in the oven on a low heat whilst you finish up cooking the rest
10. Now serve!
Until today I never realised how nice lemon and sugar are on a pancake. Unbelievable. I also sliced up some bananas, plums & apples to go on mine too. Enjoy!
